Boba-Stuffed Mochi Waffle Bites

🛒 Ingredients (Makes 18–24 mini bites)
1 cup glutinous rice flour
2 tbsp sugar
1 tsp baking powder
¾ cup milk (or oat milk)
1 egg
2 tbsp melted butter or neutral oil
½ tsp vanilla extract
Filling:
½ cup cooked Better Boba Classic Brown Sugar pearls
(Cooked fresh, lightly sweetened)
Optional upgrades:
Melted dark chocolate
Matcha glaze
Strawberry drizzle
Powdered sugar dust
🔥 Instructions
1️⃣ Cook the Boba
Prepare your Better Boba according to package directions.
Drain and let cool slightly.
You want them glossy and chewy — not swimming in syrup.
2️⃣ Make the Mochi Batter
Whisk together:
Glutinous rice flour
Sugar
Baking powder
In another bowl, mix:
Milk
Egg
Melted butter
Vanilla
Combine until smooth. The batter will be thicker than pancake batter — that’s perfect.
3️⃣ Stuff & Press
Heat a mini waffle maker (or regular waffle iron).
Add 1 tbsp batter
Spoon 4–5 boba pearls in the center
Top with another spoon of batter
Close and cook until golden and slightly crisp
The outside should be lightly crisp, the inside stretchy and chewy, and then… surprise boba core.
