Brown Sugar Boba Crème Brûlée

A creamy vanilla custard with a crisp caramelized sugar top and chewy brown sugar boba. It’s an elevated twist on classic crème brûlée while still keeping the familiar flavors of brown sugar boba.

Ingredients
For the Crème Brûlée
- 2 cups heavy cream
- 5 large egg yolks
- ⅓ cup granulated sugar
- 1 tsp vanilla extract
- Pinch of salt
- 4–6 tsp granulated sugar, for caramelizing
For the Brown Sugar Boba
- ½ cup cooked Brown Sugar Boba
- 2 tbsp brown sugar
- 2 tbsp water
Instructions
1. Make the custard
Preheat oven to 325°F (165°C). Heat the heavy cream in a saucepan over medium-low heat until steaming but not boiling.
In a bowl, whisk egg yolks, sugar, vanilla, and salt until smooth. Slowly pour the warm cream into the egg mixture while whisking continuously.
2. Bake
Divide the custard between 4 ramekins. Place them in a deep baking dish and carefully pour hot water into the dish until it reaches about halfway up the sides of the ramekins.
Bake for 30–40 minutes, or until the edges are set but the centers still have a slight jiggle.
Remove from the water bath, cool, then refrigerate for at least 2 hours, preferably overnight.
3. Make the brown sugar boba
Combine brown sugar and water in a small saucepan. Simmer for 2–3 minutes until slightly syrupy. Add the cooked boba and toss until glossy and coated. Let cool slightly.
4. Brûlée the tops
Sprinkle about 1–1½ teaspoons of sugar evenly over each chilled custard. Use a kitchen torch to caramelize the sugar until golden and glassy. Let sit for 1–2 minutes so the shell hardens.
5. Finish with boba
Spoon a small amount of warm brown sugar boba over the center of each crème brûlée just before serving.
✨ Serving Tip
For the prettiest presentation, keep the boba concentrated in the center rather than covering the entire brûléed surface. That way, you still get the satisfying crack of caramel → silky custard → chewy boba in every serving.
Optional upgrade: Add a tiny pinch of flaky sea salt over the brown sugar boba. It balances the sweetness and makes the dessert feel even more sophisticated.
