Boba-Stuffed Mochi Waffle Bites

🛒 Ingredients (Makes 18–24 mini bites)

  • 1 cup glutinous rice flour

  • 2 tbsp sugar

  • 1 tsp baking powder

  • ¾ cup milk (or oat milk)

  • 1 egg

  • 2 tbsp melted butter or neutral oil

  • ½ tsp vanilla extract

Filling:

Optional upgrades:

  • Melted dark chocolate

  • Matcha glaze

  • Strawberry drizzle

  • Powdered sugar dust


🔥 Instructions

1️⃣ Cook the Boba

Prepare your Better Boba according to package directions.
Drain and let cool slightly.
You want them glossy and chewy — not swimming in syrup.


2️⃣ Make the Mochi Batter

Whisk together:

  • Glutinous rice flour

  • Sugar

  • Baking powder

In another bowl, mix:

  • Milk

  • Egg

  • Melted butter

  • Vanilla

Combine until smooth. The batter will be thicker than pancake batter — that’s perfect.


3️⃣ Stuff & Press

Heat a mini waffle maker (or regular waffle iron).

  • Add 1 tbsp batter

  • Spoon 4–5 boba pearls in the center

  • Top with another spoon of batter

  • Close and cook until golden and slightly crisp

The outside should be lightly crisp, the inside stretchy and chewy, and then… surprise boba core.

  • Dust with powdered sugar

  • Drizzle chocolate

  • Dip halfway in matcha glaze

  • Or serve with condensed milk on the side
